Menu Plan Monday - What's Cooking at Our House This Week



Monday - Slow Cooker 3 Packet Roast (I use an eye round roast which I brown on the stove prior to putting in the slow cooker), quartered potatoes, baby carrots

Tuesday - Roast Sticky Chicken-Rotisserie Style made in Slow Cooker, Mashed Potatoes, steamed vegetables

Wednesday - Kids have a swim meet so we will grab 300 calorie Chicken Salad Sandwiches with apples from Wawa

Thursday - Leftovers

Friday - Pizza

  1. How do you do the chicken in the crock pot? Just follow the recipe and put it in the slow cooker on low all day? Thanks--looks yummy and easy!

    1. I cook the chicken in the slow cooker all day on low - usually 8-10 hours. This particular recipe does turn out well in the slow cooker. The skin does not get crispy but I usually throw away the skin anyway. The key to this recipe is rubbing the chicken with all of the ingredients, wrapping in plastic wrap and letting it marinade over night in the fridge. I also toss a little of the rub inside the cavity of the chicken along with quartered onions. This is by far my favorite whole chicken recipe. If you like crisp skin, I recommend cooking it in the oven on low as directed - it does take several hours that way but very well worth the cooking time. Let me know what you think if you try it!
